Healthy Recipe: Gluten Free Brownies

Today I wanted to share with you this amazing gluten-free brownie recipe. I like that it's actually pretty healthy, but doesn't taste healthy. It contains quinoa, which is high in protein and fibre, and cocoa powder, which is rich in antioxidants. It's also quite low in sugar for a brownie recipe, and it makes the fudgiest, gooiest brownies. It's not my recipe, but it is too good not to share!

Gluten-Free Brownies

1/2 cup quinoa
3/4 cup granulated sugar
1/2 cup cocoa powder
1 tsp baking powder
1/4 cup milk
2 tbsp canola oil (you can substitute coconut oil)
2 eggs
1 tsp vanilla

Preheat oven to 350 degrees. Spray 8-inch square metal cake pan with cooking spray.

In small saucepan, bring 1-1/2 cups water to a boil. Stir in quinoa. Reduce heat to low and simmer, covered, for 20 minutes. Remove from heat and let stand 5 minutes. Fluff with fork. Transfer to bowl and cool to room temperature.

Place quinoa, sugar, cocoa, baking powder, milk, oil, eggs and vanilla in food processor or blender. Process until smooth, about 1 minute. Pour into prepared pan. 

Bake in centre of oven for 28 to 34 minutes or until tester inserted in centre comes out clean. 

Cool in pan and enjoy!
